The first spice cakes were made on the Novgorod land in the 9th century. They had always been considered a festive delicacy because of the high price of its ingredients. Making pryaniki became a respected craft. Pryanishniki – spice cake makers – stood out among other bakers as an elite group. The unique traditions of printed spice cakes production have been preserved in Veliky Novgorod up to this day.
